Easy Entertaining: Blue Cheese Dip with Crudite


I’m rounding out the week with another quick and easy recipe to make when guests are stopping by and you don’t have a lot of time to prepare. (See last week’s post rant about having 15 minutes to get ready for company)  Blue cheese dip is a party favorite- I mean- who doesn’t love it? Whether you serve with buffalo wings or fresh raw vegetables like I did, I’m guaranteeing success with this easy recipe.

Blue Cheese Dip

What you need:

  • 2 small shallots
  • 2 cloves garlic
  • 7oz container of plain Greek yogurt (like Fage)
  • 1/2 cup mayonnaise
  • 6oz crumbled blue cheese
  • Tabasco and cayenne if you are in the mood for spice

Finely chop the shallots and garlic in a food processor. Add the yogurt and mayonnaise and puree until ingredients are combined. Place into serving bowl and gently stir in crumbled blue cheese. Add Tabasco and cayenne if you are inclined towards a dip with a kick.

Serve with raw fresh vegetables. I found amazing “PURPLE Haize” asparagus at Whole Foods today:

How crazy!? I also went with raw endive. Why these two you ask? Well, when you have a bunch of asparagus or endive- it only takes one chop of the knife and a rinse under the sink for them to be plate ready! (unlike tedious carrots and peppers which require much more knife work)

  2. This is a winner… and especially like the quick prep dimension…also a good mid- afternoon healthy snack for that 4 p.m. hunger pang. vh
