Happy Friday! I’m in an especially good mood today because after 4 days of rain- the sun is finally peeking out and it looks like this weekend will be seasonably warm and delightful. (And, because the Celtics made it to the 2nd round of the playoffs!)
This week’s wonderful quick bite recipe is so easy, it’s almost faster than buttering bread. But no one needs to know that- they look so pretty and impressive!
Ricotta Pesto Bruschetta
What you need:
- Pesto – if you have time- homemade is worth it!
- Ricotta Cheese
- Toasted slices of italian bread (Whole foods sells some nice pre-toasted ones- otherwise, just slice bread, drizzle in olive oil and toast under the broiler)
Hold the toast between your fingers. Spread a smear of ricotta on with a knife. Take a dollop of pesto and drop on top.
(So easy- I wonder how I even took three sentences to write the steps down.) The beauty of the recipe’s simplicity though, is that it is easily customizable to whatever you might have lying around the house. Today its pesto, but you could easily swap out for sun dried tomatoes, olive tapenade, or roasted red peppers.
Also, be careful when plating these! I recommend a doily or a textured platter because halfway through photographing these I picked up the plate and 3 of them slid right off and landed on the floor- upside down (of course).
